Tuna Macaroni Casserole



This recipe is very quick and easy to put together. Since I always have a can of tuna, cream-of-something soup, and macaroni on hand, it is one of my go-to meals when I am pressed for time or have no idea what to make. It is one of Little Ellie's favourites.

Tuna Macaroni Casserole - adapted from a family cookbook

1 1/4 cup macaroni (dry)
1 can cream of celery soup (undiluted) (or substitute your favourite condensed cream soup)
1 cup shredded cheddar cheese
1/2 cup crushed corn flakes
1 1/2 Tbsp melted butter
3/4 tsp paprika
1/3 cup milk
1/4 cup mayonnaise
1 tsp prepared mustard
1 can tuna, drained and flaked

Cook macaroni for 8 minutes or until al dente. Drain and set aside. In a 2 quart casserole dish, mix together soup, milk, mayonnaise, and mustard. Stir in cheese and tuna. Fold in the cooked macaroni. Combine the crushed corn flakes and melted butter. Sprinkle over casserole. Sprinkle paprika on top. Bake uncovered in 350 F oven for about 30 minutes or until heated through. Serves 4-5.

Spinach and Tomato Topped Salmon

Something tells me I already posted this recipe, but I can't seem to find it on my blog anywhere, so I am posting it again. This is an awesome tasting, healthy, and quick meal to make. It is currently my favourite way to prepare salmon fillets.

Spinach and Tomato Topped Salmon

2 - 4 salmon fillets
2 cups fresh spinach (torn into smaller pieces)
1/3 cup sundried tomato & oregano dressing
2/3 cup sundried tomatoes
2/3 cup fresh chopped tomatoes

Place salmon on greased baking dish. Mix remaining ingredients and spoon over salmon. Bake at 375 F for 20-25 minutes. Serve with rice.
