Tuscan Pizza

This is a veggie-loaded pizza and has my favourite trio - feta cheese, sundried tomatoes, and kalamata olives! If we go to a restaurant, you can almost guarantee I'll pick something with those ingredients if possible.

Tuscan Pizza


Ingredients
Your favourite pizza crust recipe
Your favourite tomato-based pizza sauce
Lots of fresh spinach
Roma tomatoes, chopped
Red onion, chopped
Sundried tomatoes, reconstituted in water or oil-packed and blotted dry
Kalamata olives, pitted and chopped
Feta cheese, crumbled
Mozzarella cheese

Top the pizza with the veggies and cheese. Bake according to your pizza crust directions.

Spinach Lasagna

Here's a new recipe I'm trying this week from a family cookbook.

Spinach Lasagna

12 lasagna noodles, partially cooked
1 cup Parmesan cheese
2 cups grated mozzarella cheese

Vegetable Filling;
2 Tbsp butter
2 Tbsp oil
1 large onion, finely chopped
1/2 cup celery, finely chopped
2 cloves garlic, crushed
2 cups sliced fresh mushrooms
2 cups fresh spinach (I'm using frozen, with water squeezed out)
1 tsp basil
1/2 tsp each of salt, marjoram, and oregano
1 cup small curd cottage cheese

Sauce:
2 1/2 Tbsp butter
2 1/2 Tbsp flour
2 cups milk
1 cup chicken stock
1 tsp salt
Handful of mozzarella cheese (about 1/3 cup)
2-3 Tbsp Parmesan cheese
dash pepper
dash nutmeg

Vegetable Filling: In a large skillet, heat butter and oil over high heat. Cook onion, celery, and garlic until soft, about 3 minutes. Add sliced mushrooms and cook until tender. Add chopped spinach, basil, salt, marjoram, and oregano. Cook, stirring constantly, and then mix in cottage cheese.

Sauce: In a saucepan, melt butter over medium heat, stir in flour and cook for 2 minutes. Gradually add milk and stock and bring back to boil, stirring constantly. Add cheese and stir to melt. Add spices and set aside.

Lasagna: Spread 1/3 of the sauce on bottom of greased 9 x 13 inch pan. Sprinkle 1/3 of Parmesan over top and cover with 4 lasagna noodles. Spread 1/2 the veggie filling over top, then repeat the sauce, noodles, and Parmesan. Put on remaining veggie filling and repeat the sauce, noodles, and Parmesan. Sprinkle the top with mozzarella. Bake at 350 degrees F for 35-45 minutes until sauce bubbles and cheese is golden brown.

Red & White Tortellini


This is a very easy and fairly quick pasta dish to make. It was a huge hit with my husband and a pasta dish I will definitely make again. Here's the recipe, which would serve 5-6.


Red & White Tortellini

680 mL can or jar of pasta sauce
2 Tbsp butter
2 cups sliced fresh mushrooms
1/4 cup chopped onion
1 clove garlic, minced
2 Tbsp flour
2 Cups milk (I used 1%)
2/3 cup grated Parmesan cheese
Salt and pepper to taste
1 1/2 cups grated mozzarella or cheddar cheese
600 g tortellini, cooked (I used 3 cheese tri-colour tortellini)

Mushroom Sauce: Melt butter; saute mushrooms and onion with garlic until tender. Sprinkle with flour and gradually stir in milk. Cook and stir over medium heat until mixture thickens. (I added a handful of mozza cheese to this and let it melt.) Remove from heat, stir in Parmesan cheese, salt and pepper to taste. Add the sauce to cooked, drained, tortellini.

Spread spaghetti sauce over bottom of 9 x 13 inch casserole dish. Spoon tortellini mushroom mixture on top. Sprinkle with mozzarella cheese. Place in 300 F oven for about 30 minutes to heat through and melt cheese. Serves 5-6
