Chef's Salad

This is a delicious, healthy salad. It makes a fantastic lunch and can easily be adapted to whatever ingredients you have on hand.

Chef's Salad - serves 1 as a main

6 romaine leaves (sub in any greens you like)
6 baby carrots, cut into match sticks
1/4 cup cooked cold peas
1 hard boiled egg, sliced
handful of shredded sharp cheddar cheese
1 Tbsp chopped green onions
2-3 slices of deli turkey breast, diced

Dressing: (makes more than you need)
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
2 tbsp minced chives or green onions
1 tbsp dijon mustard
1/4 tsp salt
pepper to taste

Whisk together. Add 1-2 tbsp to salad and toss. Save extra in fridge for up to 1 week.

I wanted a salad to bad yesterday! I made a big one for dinner & had 2 bowls full =) Yours looks delish.
