Menu Plan

Only 8 days away from my due date! (or 10 days if using a different calculation). I'm drinking my red raspberry leaf tea, chowing down pineapple, and have a few spicy dishes for this week. I'm getting terribly impatient!

Here's the plan for the week:

Invited over for lunch
Leftovers for supper

Creamy Tomato Pasta with Salad

Firecracker Salmon, Stir Fry Veggies, Brown Rice

Crockpot Coconut Chicken Curry (using this recipe as a base), Mashed Potatoes (or leftover rice), Mixed Cooked Veggies


Homemade Pizza & Caesar Salad


Lunch Ideas
Oven Toasted Ham & Cheese Sandwiches
Curry Egg Salad Sandwiches
Greek Salad with Creamy Feta Dressing

That coconut curry recipe looks lovely..but how are you doing it in a crock pot?

The plan is to quickly brown the chicken, onion, and garlic in oil and then throw everything into the crockpot and cook on low for a few hours. I am also going to add some garam masala spice and substitute a small can of tomato paste for the tomato sauce because I think it would be too thin with the sauce, especially if I use the crockpot. I'll let you know how it turns out :-)
