Beef Barley Soup
6 cups beef broth
1 28 oz can diced tomatoes
1 10 oz can tomato soup
2 cups cubed potatoes
1 1/2 cups chopped onions
1 cup chopped celery
1/2 cup pearl or pot barley
6 more cups water
1 tbsp parsley
1 tsp white sugar
1 tsp salt
1/4 tsp pepper
1/4 tsp thyme
3 cups leftover roast beef, chopped
Heat the beef broth in large pot. Add remaining ingredients (except beef). Bring to boil. Cover and simmer 1 1/2 hours. Add beef and simmer 1/2 hour more.
