Menu Plan Monday (March 7, 2011)

I've been trying my best to follow the allergy specialist's advice and eliminate dairy. I definitely have not eliminated it, but I would say I've drastically reduced my consumption of it. Oh, but I love cheese. That one has been hard to give up. Right now, my recipes can be found by looking under my labels on my right hand side column. I have hopes of creating a recipe index on this blog soon, so that finding my recipes will be an easier process. I am going to try to improve my photos of food, but I'm not the greatest photographer in the world. We'll see how things go. By the way, my grocery challenge is going off swimmingly! (I don't know why I felt the need to put it that way...swimmingly...who says that anyway??) I went grocery shopping last week and got away with purchasing mostly fresh fruits and vegetables with very few canned/dry/bottled goods. That sure does decrease the grocery bill! In fact, the way things are going, I might be able to cut our usual bill almost in half!..At least until I run out of the staple pantry/freezer items.

Here's my dairy-reduced menu for the week:

Sunday, March 6
Lunch: Pizza (just a frozen one from the freezer)
Supper: Taco Salad (using leftover taco meat in freezer)

Monday, March 7
Sweet & Tangy BBQ chicken (using leftover roasted chicken from freezer) & coleslaw pitas, marinated bean salad (NEW)

Tuesday, March 8
Pasta in lemon caper sauce, Caesar salad

Wednesday, March 9
White chicken chili (NEW - adapting the recipe a bit), buttermilk cornbread

Thursday, March 10
Leftovers

Friday, March 11
Sweet & sour meatballs, rice, green beans

Saturday, March 12
Leftovers

Desserts/Baking/Other:
Homemade pita pockets
Honey whole wheat bread
Pita chips (made from homemade pita pockets) with hummus
Rhubarb crisp
